Dale is the second-generation owner and head butcher at Vaughn Family Meat Co. He grew up cutting meat alongside his father Ray and still breaks down every side of beef that comes through the shop on Ranch Road in Gardnerville.

Most mornings you will find him at the block trimming steaks to order, coaching the crew on yield, and making sure the case is ready before the doors open. Afternoons are for custom cuts, whole-animal breakdowns, and the quiet work that keeps a family butcher shop honest.

When he writes for The Cutting Board, Dale shares butchery technique, choosing the right cut, and lessons from three generations of Carson Valley meat cutting.
