Smoked brisket is the mountain every backyard pitmaster wants to climb. The cut is tough, full of collagen, and it needs time, steady heat, and a little restraint. We smoke briskets at Vaughn Family Meat Co. the same way we teach customers at home: low temperature, good wood, and no peeking every ten minutes.

Patience Pays Off

Season simply with salt and pepper, or use a basic rub without too much sugar. Run your smoker around 225°F to 250°F and plan on roughly an hour per pound, though every piece of meat has its own timeline. Wrap in butcher paper when the bark looks right and the internal temp stalls.

Rest the brisket at least thirty minutes, up to a couple hours in a cooler if you are serving later. Slice against the grain. If you want a practice brisket before a big event, we can trim a whole packer or sell you a smaller point—just ask at the Gardnerville shop.
