Raw beef steaks on a board

Slow cooking is how you turn tough, affordable cuts into something tender enough to fall apart with a fork. The key is collagen—connective tissue that melts into gelatin over hours of low, moist heat. That is why chuck roast beats tenderloin for pot roast every time.

Our Go-To Cuts

Beef chuck roast and short ribs are classics for the Crock-Pot or Dutch oven. Pork shoulder makes pulled pork and carnitas. Beef shanks and oxtail add rich body to soups and stews. Brisket flats work well when you want slices instead of shred.

Season generously, brown the meat if you have time—it adds depth—and do not rush the simmer. Stop by our Gardnerville counter and we will point you to what is on special. Slow cooking is forgiving, but it starts with the right cut from the butcher case.
