Most mornings at Vaughn Family Meat Co. start before the sun hits the Sierra ridge. While the retail counter is still quiet, Cody is checking the smokehouse—temperature, airflow, and the color on yesterday's briskets and bacon slabs.

Low and Slow

Smoking is not fast food. Brisket might rest in the smoker twelve hours or more. Bacon cures first, then smokes low over hardwood until it picks up that mellow, campfire note our regulars recognize. We use local apple and cherry wood when we can get it, and we never rush a batch to fill the case.

By afternoon, the shop smells like the best backyard BBQ you have ever walked past. If you stop in on a smoking day, ask what is coming out of the house next. Whatever lands in the case that week went through the same patient process—one batch at a time, right here in Gardnerville.
